My Experience and Favorites (Round One): GFAF Expo NJ '13

The Gluten Free & Allergy Free Expo (GFAF) has come and gone. I had the opportunity to meet so many great people and sample some great products. If you follow on twitter or Facebook then I'm sure you saw some of the great products, but I thought I would recap and really share my experiences. Share the products I really loved and link up to those other bloggers I met.

There is so much information out there on gluten intolerance  Celiac Disease, and all the other food related allergies, but even with all the information most people don't fully understand. Most of us that don't eat gluten aren't doing it for a fad, we actually can not eat it. It makes us sick. To some people even just the smallest crumb will cause sickness. As gluten free bloggers (and even other food allergies/sensitivity bloggers) it is up to us to help educate others. I know that I will share my personal experiences and issues at times but I will usually just share a recipe and move on. I am the only one that is gluten free in my family, even extended. So I am only responsible for me, I will usually take full responsibility if I get glutened. I am lucky to have a very supportive family and supportive friends. I am also aware that there is a good chance my son will have issues, I think about it all the time. I don't want him feeling like I did, so for now I just pay attention.


To start off, I want to share a couple of the other bloggers I met.

Now, on to the products and vendors! First, I would like to say everything is based on my personal opinion... For a full list of vendors and the links to their websites check out the GFAF Expo website, here.

I'm not going to touch on every vendor I stopped and talked to but I will touch on a few of the vendors and products that I really liked. As you may know, being gluten free can prove difficult when there is something that you really crave, something that you really enjoyed (at the time) before going gluten free. A few of mine have been certain pasta dishes and good pizza. So, that being said, I'll start off with some pasta and pizza...(Please don't mind the pictures, they are from Instagram and not the best.)


Favorite Pasta: Conte's Pasta Company - frozen pasta dishes and pizza. They have ravioli, stuffed shells, pierogies, gnocchi and more. I really liked these, the filling had good flavor and the pasta, well the pasta was good for a GF rice based pasta. The key will be how well it reheats..



Favorite Pizza: Against the Grain - Based out of Vermont, the pesto pizza was awesome...the crust was thin and crispy. I can't wait to try some of the other flavors.


Favorite Bread: Okay, this one was hard...so I'm going to break the category up.

Sandwich Rolls- goes to Local Oven, they are based in Texas, the rolls were soft and airy. They lacked the dense dryness of many GF rolls I've tried. The freeze and toast well...I will be advocating getting these in a store near me. 


Baguettes- goes to Everybody Eats from Brooklyn, NY. They also make bagels, but the crunchy outside and soft middle were to die for.




Sourdough- goes to Luce's Artisan Bread, it's the only product I actually bought. It's a mix that you add water and bake, everything is included and the flavor was spot on, the texture perfect.


Favorite Breakfast Cereal: Holy Crap Cereal - I have been eating chia pudding for breakfast lately and this cereal totally takes it to another level. Filled with chia, hemp hearts, fruits, and more, just mix with water or your favorite milk and you gave a filling breakfast.

Favorite Beer: New Planet Brewery - This was the only true gluten free beer at the expo, there were five different types to try.  I have to admit I did like most of the beers but the flavors of new planet just worked. I am a wine drinker so beer usually isn't my thing, but every now and then I do just want a beer. 


Favorite Cheese: Cabot Cheese- okay to be fair, I think they may have been the only cheese at the expo...but since I am a cheese snob, I was really excited about Cabot. Even though it says it right on their packaging, their cheese is lactose free...so if you are lactose intolerant you can still enjoy the cheese. (Most aged cheese should be okay for us lactose intolerant.)

Latest Struggle...

I'm going through a bit of a hard time. I'm struggling with issues, trying to make sense of things that really make no sense. I have been uncomfortable for days, unsure of what is causing it. Food? Stress? Anxiety? I don't know. What I do know is I really want it to stop. A few weeks ago I went to get the results from my last procedure...I went in with high hopes, I haven't been having any symptoms and I have been feeling great. What I was told was that instead of being better, or dormant, my UC is in fact spreading; getting worse without actually showing external symptoms. I really don't understand, and perhaps I'm not supposed to. I feel like I'm in a rut, just can't get out. I am really trying to stay positive and happy, I know I can only control so much...

It was suggested that perhaps I should keep a food journal. Keep track of food that might trigger certain symptoms. I know there are foods beyond gluten that I should probably ween out of my diet. Dairy and beef being two big ones, and honestly the beef is easy...dairy not so much. I buy dairy free milk, my son ends up drinking most of it, which is okay I don't mind since I don't really drink much. I also, really need to take my medication. I am SO bad with taking pills. Especially when I feel fine. (Speaking of which, I haven't taken them yet today.) But I need to take my medication, I have three different types I take now; plus two others to take when I am having bad symptoms. I think there are about 5 different medications right now. Ugh...just writing that out sucks.

I am gluten free, it has made me feel so much better. I believe, and my doctor agrees, that I have a sensitivity on top of the UC, as well as probably being lactose intolerant...yes right now I am totally bummed. I love food, I have changed so much to make myself feel better, to feel normal; and I feel really good...or I was. I am just so confused.

I appreciate you listening, I just needed to get this off my chest. I'm sure my husband is tired of hearing about it, even though he will sit and listen like he knows what I'm going through. My top 12 of 2012!

The year is over, and I know I am a couple days late, it has been a long yet quick 2012.  I have made a couple life changes this past year which have made me stronger and healthier.  I accomplished my first triathlon, which I never thought in a million years (and probably anyone who knows me) thought I would ever do. I have completely changed how I eat, going gluten free has been a blessing.

In case you have been wondering...

Fall. It is hands down my favorite season; it is also my least favorite. Go figure. It is funny how one can look forward to and dread something all at the same time, but I do. It is a struggle every year.

I love the crisp air, sweat shirts and jeans, bonfires, the color change, the smell in the air, the food...oh sweet warm and comforting food and fall produce, just to name a few.

I hate (and I don't like to use the word lightly) the short days, fall allergies, depression, my car (oh wait that isn't just because of the fall) and those sneaky winter like days. Granted this season is feeling a little worse due to my continuous flare up (yeah, yeah it may get to be a little TMI but it is my blog right? Right.) It is causing me to be a little more bummed then normal and is literally draining the life out of me. Not to mention it is also putting a damper on my personal and work life.  The mornings are hellish, and I must admit as cute as it is, it bothers me that my almost 3-yr old is concerned about me.

I have talked about changing up my diet before and I have gone through periods of time doing so. But this time is more of a need then a want. I don't like that I will need to give up certain foods or change at all but I am at a loss. Medication alone isn't helping enough. So with the support of my wonderful family I am going to eliminate things from my diet, and hopefully slowly introduce them back to see if and what may affect me. Worse case, I will be on a quest to make bland food not as bland. I know this isn't going to be easy, and will take a lot of planning on my part so I don't deprive my family of what they want.

Knowing I am going to struggle with this, I at least know I have great support; which I know is really important. Of course I am also doing this close to the holiday season, so temptation is going to be knocking all the time! But I need to listen to my husband and think before I just grab. "Think about what the effects will be, is it worth it?" the words of my wonderful husband.

So my plan for this weekend is to go through what we have in the house already. Make a "Catherine" spot, a place I can keep any special food, my snacks (in both the cabinets and fridge). Make some lists, and come up with substitutions for some of our regular dinners. I currently try my best to plan dinners but there are still days that we forget to take out meat from the freezer or just run out of time and opt for something quick and easy. Since my husband is the one who usually makes dinner {love him!}, I need to make sure whatever changes I make doesn’t affect his schedule and is or are easy to incorporate with whatever else he is making.

My mom told me she bought me a book, so hopefully it will be here soon and will have some other ideas to make the transition a little easier. By the way, if you are my friend…try not to offer me any food. I am really going to be working hard on not just giving in. I thank you in advance! I just needed to get this all off my chest and I am sure I will keep posting about my progress along with some of the recipes that I have tried or altered. But, for now I am going to end this with something that I look forward to trying!

Why I am walking in the CCFA Take Steps Walk…

As some of you know I have had some issues and have been working with my doctor to resolve them (this may be a little TMI for some people so if you don’t want to know this part of me I suggest you stop reading now.) I while ago I posted a blog about My Struggle with Food, where I touched on some of my issues. But first let me say a little about the walk itself.


The Crohn’s and Colitis Foundation of America (CCFA) raise awareness and funds to help with the fight against Inflammatory Bowel Diseases (IBD) which include Crohn’s Disease and Colitis. Now there are over 500,000 people that suffer with IBD, roughly half with Crohn’s and half with a form of Colitis. What I have read it is rare for these diseases to cause colon cancer, but the more severe forms may make you more susceptible. These diseases affect people’s everyday life making it difficult to do everyday things. I suggest checking out their website for more information. I am new to this and am still learning.

On to my personal reason…I have been diagnosed with colitis, I was just tested for Crohn’s the other day and have not heard the results from that yet. (My next appointment is in November.) I have had internal issues for as long as I can remember but it didn’t get really bad until my third trimester with my son. My first doctor made me feel like he didn’t care and that everything was normal. Well I didn’t get better after I had my son, I would go a month or two with no symptoms then I would have really bad flare ups. So I decided to get another option. I ended up going to Johns Hopkins Gastroenterology (GI) Division, and have been super pleased. I really like my doctor, he really takes the time to listen and explain things. Since I have been going there I have had a lot of blood work done to test all sorts of things (some numbers came back low but now low enough to be too concerned) and have had a colonoscopy. The original prognosis was that I had proctitis which is a form of colitis that only affects the lower part of your colon (rectum) but the colonoscopy showed inflammation much higher. I was actually showing inflammation around my appendix, which is why, just to be safe and hopefully rule out, they are testing for Crohn’s. I am currently taking four types of medication, to hopefully make me go into remission, once I am symptom free we will work on maintaining that. But it will come and go forever, and the worse thing is that it is hereditary which means there is a pretty large chance my son is going to end up going through everything I am and possibly worse.

I have walked in many charity walks but I usually have only known or known of people that were affected by which ever charity. Be it for cancer, autism, MS or even premature babies. This time I am the one affected, so this is really different for me. So if you read this and can help with the cause, even if it is just one dollar ($1.00), I would personally really appreciate it.

Struggling with Food - A Rant

Lately I have been really struggling with food, I have a list of food that my doctor has told me to avoid, I am trying to maintain a healthy diet and calorie intake, I am now in need of more calories than my body has finally gotten used to and I just don’t have the will power to make the best choices. Excuses, excuses…I know!

Just a little back ground information…
I have been trying to lose weight for what seems like forever, but this year I have gotten serious and have lost almost 25 pounds since April. I changed my diet, controlled my portions and started exercising. I have recently hit plateau. So I decided I was going to do one of those crazy work outs that are on TV. My choice? Insanity. And yes, it is insane. On top of those changes I was also diagnosed with IBD which has restricted my diet. I am supposed to avoid; dairy, red meat, chocolate and spicy foods just to name a few. And if you know me…it is SO hard!
So okay…Since starting Insanity I have become really tired and fatigued. I first just figured, “I’m working really hard, it just is what it is, I will get used to it.” Well, I never changed how I was eating. I have gotten used to a 1200 calorie diet and well I am burning at a minimum 500 calories a workout. So I am pretty sure my body isn’t getting the nourishment it needs. The problem? I am going to try to eat at least 500 more calories a day. This is hard; I sometimes don’t even hit 1200 so adding more is harder than one may think. And yes, I could eat more cookies, ice cream, chips, etc. but that is NOT what I want to do. I have also been giving in to temptations. I have been finding it really hard to say no, and it is most likely that my body is craving something that it just isn’t getting.

So what to do? That is my dilemma. I could add a piece of fruit, dairy-free yogurt or nuts. More carbs? Protein? I need healthy choices, and I am really struggling with it. I don’t want to load up on carbs. I really don’t like left-over meat. Nuts can be a little too fatty (and I can never eat a serving). I just would rather not eat yogurt. Luckily with it being summer, all the summer fruit is out so I should be able to eat that.

I need to start planning my meals. Right now, I am about to run out the door in the morning when I realize I need something for breakfast and lunch, so what happens? I grab something quick. I try to grab the healthy stuff but I usually end up grabbing that left over rice, or pasta. So I am going to make an effort to plan. My husband does dinner, but I can plan lunch and breakfast, and snacks I can’t forget the snacks!

Spread the Word...



Today is the national day to Spread the Word to End the Word. The word "retard(ed)" hurts millions of people with intellectual disabilities, their families and friends. Take the pledge and help promote the new r-word Respect.

I have always felt strongly about not using this word just like a lot of people are strongly against the n-word. I don't boycott movies, actors, etc. because they use the word. Yes it makes me cringe, just like other words I my find offensive. Does that make me a supporter? A hypocrite? Sometimes I think is does. But then I think of all the other things in movies; if they are bad mouthing religion does that mean I don't really believe in God, or when it is strongly racial does it make me racist? No I don't think so. Now if the r-word is dropped like every other word, yes it will get turned off. I personally do not use the r-word and I do usually say something if some one uses the word around me.  I can't change the way people use the word, but I will try and make them aware of it.

Why do I take this personally? Well I have always had, and still have, a special place in my heart for special people. I am a volunteer with our local Special Olympics and with best buddies. (Who are both sponsors for end the word.) So I have seen first hand how it affects people and their families.

I took the pledge and do every year to help end the use of the r-word. I then pass the information on, it is my way of spreading the word. There are groups and organizations that do more, there is a list on the website. There are also resources to help your group plan an event, plus a lot of other tools. But at a minimum you can take the pledge, and pledge that you yourself will do your part to end the word.

Remember that no matter how you use the r-word it is always derogatory and will offend or hurt someone.

11.10.10

The past few weeks have been really over whelming and cause for much anxiety. Other than the normal stresses of life: money, work, and family. We have had the stress of dealing with my husband’s mother, who had a heart attack which resulted in a quadruple by-pass plus a stint. So my husband, who is an only child, was with her in the hospital and when she was brought home (a week later). Leaving me and my son home basically alone all week, now I am not complaining because I know if the roles were reversed I would have been doing the same thing. This all happened last week, right at the planning stages for my son’s first birthday.

Now I could go off on a tangent, and vent all of my feelings and I probably should because I have A LOT built up. But…I know that I can’t because I don’t want to hurt feelings or make people feel like any of it is their fault. I am full of anxiety over my life; certain things that are happening now are just increasing it. I have been on the verge of tears for weeks, trying to hold it together. The stress of everything is just becoming over whelming. Is it just normal this time of year? Time change? Holidays? I don’t know.

But even though I am feeling this way I just keep on trucking…I have a first birthday to plan. I need to keep a smile on my face and keep moving forward. As much as I want to curl in a ball and lock myself in my room, I can’t. I am a mother and a wife; those duties don’t get vacation time, or sick time. So I need to go to the grocery store and get the last few things, and tonight I am going to have to start prepping, because if you have read earlier blogs, Saturday is going to be consumed with decorating cup cakes.

On to the plans, we are having my son baptized in the morning, he will have time for a nap (hopefully) and then a birthday party that afternoon. Because it starts at 2, I am not planning on serving real food, just appetizers and snacks. That should be ok, right? I wouldn’t assume I was being feed a meal if I went to a party at 2. The sad thing is that there are people that are invited that probably would assume we will be feeding them a meal. But that is just how those people are. I was also hoping that since the party is on a Sunday afternoon some people wouldn’t make it, we don’t really live close to anyone. But to my surprise, everyone is coming, so let us pray for a nice day so people (at least the kids) can go out side. I don’t have any other plans to keep kids entertained so fingers crossed.
Well time for another deep breathe and move on.
